Tangy bean and corn salad/salsa
Got this recipe from my cousin since hubby LOVED it last time she made it for a party. She eats it as salsa but I like to grab a spoon and dig in. This makes a pretty big batch as is. [MENTION=563]Jessica Brooke[/MENTION] I doubled but only had 1 bottle of vinegar so I might add more. It is good this way too. I added some garlic powder, cumin, salt, pepper and cayenne to taste just because.
planning on throwing some into a quesadilla for the kids dinner.
2 cans black beans drained
2 cans corn drained
Bunch Cilantro
1-2 green bellpeppers cut into chunks or bite size peices
2 Avocados cut into chunks
1/2 red onion cut into chunks or bite size pieces
1 whole bottle of roasted garlic rice wine vinegar. Purple Lid (Nakano brand)
don't use anything but this vinegar!!

Oh yum! a variation of the corn salad but with black beans...sounds delicious. I love vinegar-y foods
