Chicken Waldorf Salad
I used to get this salad at the hospital cafe every evening. I tried for years to reproduce it and finally convinced someone to give me their secret. It's the heavy mayonnaise--probably not the healthiest option, but it really makes the salad. I get mine at a restaurant supply.
Mix together in a large bowl:
1 medium apple, unpeeled, chopped
Juice of 1 lemon (about 2 tablespoons)
2 cups diced cooked chicken (about 1 large breast)
1 cup red seedless grapes, halved
1 stalk celery, finely chopped
1/2 cup walnuts
Fold in:
3/4 to 1 cup of heavy mayonnaise
I serve on a bed of lettuce with a warm dinner roll. You can also add golden raisins to this, but I prefer it without them.
While this recipe is good immediately after preparation, it's really good several hours later!Last edited by ChrisRN; 08-13-2013 at 06:30 PM.

well, there are definitely some healthy components here...the apple, the chicken breast, the walnuts...what's a little mayo, right?!

Is heavy mayonnaise different than just plain Hellman's Mayonnaise? Or what is that favorite Southern one? I can't remember the name right now.

It is different, [MENTION=7]LariP[/MENTION]. It's thicker and heavier. The salad is good with regular Hellman's or Kraft, but the heavy mayonnaise is better. I get it at a Gordon's Food Service of GFS store.
