    Potato Salad

    This is my mums recipe that she used to make and the good part is it is both Gluten and Dairy free @Alice Kable

    Small bag of chat potatoes diced into cubes
    3 rashers of GF bacon diced
    I small red onion finely diced
    mayonnaise I use a GF and Dairy free one
    3 hard boiled eggs chopped

    method;
    place cubed potato into pot of water and cook until tender but do no overcook, while the potatoes are cooling fry the bacon until cooked and drain on a paper towel to cool.
    place in bowl diced onions, cool bacon potatoes and eggs stir ad mix add enough mayonnaise but not adding too much and place in fridge to get cold.

    Serve with meat and a tossed salad.
