Five Salads from Around The World (YTBT)
I got this from my expired health insurance company... LOL! But a couple of them sound tasty! That cucumber one sounds light and fresh! I bet that would be just as tasty with yogurt as sour cream...
A Taste of Guatemala - Radish Salad
Mix the following ingredients together in a large bowl: one pound of washed, trimmed, and sliced radishes, one-fourth cup of chopped mint, one-fourth cup of lemon juice, and one-half cup of orange juice. Add salt and pepper according to your taste.
A Taste of Mexico - Taco Salad
Full of flavor, protein, vitamins, and fiber, taco salads are easy to make and even easier to enjoy. Brown approximately one pound of ground beef with the white parts of six green onions in a frying pan, adding one tablespoon chili powder for flavor. In a bowl, mix one medium-sized head of romaine lettuce (chopped), one diced tomato, one diced avocado, and the green part of the six green onions (diced). Toss with the cooked ground beef and one cup of grated cheddar cheese. Serve with tortilla chips. If you are looking for healthy food ideas with fewer carbs, omit the tortilla chips.
A Taste of the Caribbean - Egg and Onion Salad
A delightful salad that is served in layers, the egg and onion salad is easy to prepare. Hard boil 6 eggs, peel, and slice them in ovals. Blanch one small bunch of asparagus tips. Wash and shred one small head of lettuce. Slice 3 medium-sized Spanish onions. Grate one-fourth of a cup of parmesan cheese. Toss the lettuce with a vinaigrette dressing. Alternate layers of your ingredients in a bowl and chill for about one hour.
A Taste of Poland - Mizeria (Cucumber and Sour Cream Salad)
Peel, halve, and slice two seedless cucumbers. Toss with about two teaspoons of salt. Allow this mixture to sit for at least 15 minutes so that the cucumbers soak up some of the salt. After 15 minutes, rinse them with cold water and pat dry. Combine the cucumber slices in a large bowl with two tablespoons chopped dill, a half cup of lemon juice, and a half cup of sour cream. Season to taste with salt and pepper.
A Taste of France - Tuna Nicoise
Tuna Nicoise makes a delicious meal filled with healthy food ideas. It has protein and fiber, and it is filled with vitamins. Simmer two thick tuna fillets in a pan containing one inch of heated water with a touch of dried tarragon, pepper, and salt for about seven or eight minutes. Chill for one hour. Just before the tuna has finished chilling, prepare each of two plates with a bed of lettuce covered with chopped tomatoes (one each), quartered hard boiled eggs (one each), four black olives, and two full teaspoons of capers.
