Boc Choy Salad (aka Raman Noodle Salad)
Boc Choy Salad (aka Raman Noodle Salad)
1 bunch Boc Choi
5 Green Onions
1 8 oz package sliced mushrooms
Chop and tear up into a bowl
Sautee
1 package Raman Noodles (I like a lot of noodles in this so I use 2 packages) but only use one package of the seasoning I prefer the oriental flavor seasoning or the mushroom.
1/4 cup Sesame Seeds
1/4 cup Slivered Almonds
1/4 cup Butter
Combine with Boc Choy and Onions
Dressing
1 cup vegetable oil Or Olive Oil if you prefer
2 tbsp Soy Sauce
1 cup sugar
1/4 cup red wine vinegar
Mix dressing ingredients together.

Ooh that sounds good and different. Have never had boc choy I don't think so this would be something neat to try.

I got the recipe from my boss after she brought it to a potluck we had.
Boc Choi is reminiscent of cabbage, only lighter in texture and flavor.
I have also had this with shredded coleslaw mix in place of the boc choi.
