Peanut Pasta Salad
1 lb. spaghetti broken into 2 ½ inch pieces
1 tsp. crushed red pepper flakes You can add more if you like more of a bite!
¼ cup corn oil
¼ cup dark sesame oil
6 tbsp. honey
5 tbsp. soy sauce
1 tsp. salt (optional)
¾ cup chopped roasted peanuts. You can use dry roasted.
½ cup chopped cilantro
½ cup chopped green onions
Cook spaghetti (a tsp of oil in the water will keep it from sticking together) and drain. Rinse and let cool.
Put oil and red pepper in sauté pan and heat for 2 minutes, DO NOT BOIL
Add honey and soy and salt (if using)
Combine the sauce and spaghetti in bowl and let chill. You can do this a couple of days ahead. It tastes better if it chills at least overnight.
Before serving, add cilantro, green onions and peanuts. (note) It stays nicely for days even with the cilantro, onions and peanuts.Last edited by LariP; 01-19-2013 at 04:25 PM.
