    Rice & Whole Grain Salad

    2 cups "Rice Select, Royal Blend, Whole Grain" (It is a blend of Texmatic Brown Rice, Red Rice, Pearled Barley, & Rye Berries)
    2 cups Petite Early Harvest Peas thawed
    2 cups " " " Corn thawed
    1 Red Pepper cored, seeded, diced small
    !/2 Orange or Yellow Pepper cored, seeded, diced small
    3 Tbsp finely Chopped parsley
    1 Tbsp " " " " cilantro
    1 cup walnut pieces

    1/2 cup canola or sunflower oil
    4 Tbsp walnut oil
    4-5 Tbsp red wine vinegar
    2-3 Tbsp dijon mustard
    1 large clove garlic crushed

    Cook rice as directed on container (45 min. don't overcook). When done drain rice and rinse with boiling water and drain again.
    Make dressing while rice is cooking; whisk all ingredients until well blended.
    Pour dressing over rinsed rice while rice is still warm.
    Prep vegetables. When rice has cooled add veggies & nuts. Toss thoroughly but gently.
    Refrigerate 4 hours before eating.
