    Black Bean Fiesta Salad

    This is from an old weight watchers recipe book and I just LOVE it! When I make it I like to use feta instead of jack cheese, I also omit the celery most of the time.

    3 T fresh lemon
    2 T extra virgin olive oil
    1 garlic clove, minced
    1/2 t ground cumin
    1/2 t ground black pepper
    1 19 oz can black beans, drained and rinsed
    1 cup corn
    2 celery stalks, diced
    1 half green bell pepper, seeded and diced
    1 half red bell pepper, seeded and diced
    One large tomato, chopped
    1/2 red onion, finely chopped
    3/4 cup cubed monterey jack cheese

    In a large bowl, combine the lemon juice, oil, garlic, cumin and black pepper. Add the remaining ingredients, toss to coat.
