Thread: Potato Salad

Potato Salad
6 potatoes
6 eggs
Put together in a pan of cold water and set to boil. Boil the eggs to hard boiled (8 minutes) then remove them and put in ice water to cool and continue boiling potatoes until knife inserts easily. Place potatoes in ice water to chill faster also.
Chop all but one egg. Slice that to put on top.
Dice potatoes.
Mix dressing
2 cups Mayonnaise (I'm a Hellmans snob these days, but even Miracle Whip can be used)
1/4 cup Mustard
1/4 cup Sugar
1 Tbsp Celery seed
1 mediim Finely chopped onion or 4 chopped green onions.
Salt and pepper to taste. ( I used white pepper for years so picky kid didn't know he was eating pepper)
(All measurements are approximate I never measure, just "eyeball" and taste test.
Pour dressing over potatoes and eggs mix gently but thoroughly.
Put sliced egg on top (optional)
Sprinkle with paprika for color (optional)
Some people think this needs chopped celery too. That is not my preference but you can add or omit as you like.
I'll add that the dressing "recipe" is pretty much the same one I use for macaroni salad and deviled eggs. I just add pickle and cheddar cheese for macaroni salad and omit the potatoes.
Deviled eggs I omit the onion and add finely shredded cheddar cheese to the egg yolks and dressing (smaller amounts of dressing obviously)Last edited by LariP; 01-19-2013 at 03:44 PM.
