    Greek Tortellini Salad

    **WINNER** Recipe of the Week July 2012

    By far one of my favorite salads for summer.

    1 pkg (20oz) Cheese Tortellini
    1/2 C Ken's Balsamic Vinegar & Oil Dressing
    1/4 C Lemon juice
    2 Tbsp chopped fresh parsley
    1 tsp dried oregano
    1/2 tsp salt
    1 lb baby spinach leaves
    1 C crumbled feta ceese
    1/2 C slivered red onion
    6 large hard boiled eggs

    That is the basic recipe, you can also add and I do

    1/2 C wishbone Greek Salad dressing
    1/2 C chopped green onion
    1/4 C calamata olives coarsely chopped

    bring 2 quarts water to a boil and add tortellini. Cook, stirring occasionally. until tender to bite, about 3-5 mins. Drain, Rinse with cold water. Meanwhile, in a large bowl, combine both salad dressings, lemon, parsley, oregano and salt. Add cooled tortellini and mix to coat. Cover and chill at least 2 hrs or up to 1 day. When ready, add remaining ingredients and mix gently. garnish with eggs.

    Yum this looks good and was actually looking for new salad ideas. Def will try this one!

    Made this last night, YUM! Only thing is I used a 5oz package of baby spinach and it was a LOT already, cant imagine how you get a whole pound of fresh spinach in there. lol I used a big bowl to begin with. Was VERY good, served with some chicken breasts on the side. Will be my lunch for today.

    I like this recipe - Grilled Turkey salad
    It's always a good option))
    One skinless turkey breast (1lb)
    8 to 10 lettuce leaves
    6 to 8 Romaine Lettuce leaves
    8 to 10 arugula leaves
    Ten cherry tomatoes
    7 oz mozzarella cheese
    2 tbsp olive oil
    1/2 lemon
    One pinch of salt
