My favorite potato salad
This recipe really, truly, honestly is my FAVORITE potato salad recipe! Not kidding! It's such a simple recipe, really, quite basic, and I think that's what makes it so delicious. Nothing fancy. Just make sure to use REAL mayo, not the lowfat or non-fat kind. I love Best Foods (or Helms in other parts of the country).
The last time I made this was 3 weeks ago for a backyard BBQ and many folks asked me for the recipe.
It is not my own recipe so I must give credit to Eric Warren for it. BUT I did make it and try it and will definitely be using this as my GO-TO potato salad from now on!!
Here it is:
Ingredients
4 pounds Idaho potatoes
4 jumbo eggs, hard boiled
2 1/2 cups mayonnaise
4 green onions, finely chopped
3 stalks celery, finely chopped
1 tablespoon yellow mustard
1/2 teaspoon freshly ground white pepper
1 teaspoon kosher salt
Directions
In a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool.
Peel cooked potatoes and cut into small chunks. Put in a very large serving bowl or container.
Peel and finely chop hard boiled eggs and add to bowl.
Add mayonnaise, green onions, celery, mustard, white pepper and salt. Mix until just combined. Cover and chill in the refrigerator for 3 hours before serving.Last edited by LariP; 01-19-2013 at 03:43 PM.

This sounds really yummy, I'll have to try it next weekend when I have a family barbecue for my sons birthday.
