Chicken or Turkey Tortellini Salad
½ cup lemon juice
4 Tbs sugar
2 large shallots
1½ tsp salt
1 tsp pepper
2 tsp dijon mustard
½ cup olive oil
2 lbs chicken tenderloins or turkey breasts
2 (9 oz.) pkgs cheese tortellini
1 cup grape or cherry tomatoes
3 cups leaves/mixed lettuce (spring mix is great)
1 heart of romaine
1 Prepare marinade and defrost chicken. Cook tortellini as package instructs. Boil until just done, do not overcook. Drain water in strainer and refridgerate.
2 Marinade: Combine lemon juice, sugar, shallot, salt, pepper, dijon mustard and vegetable oil. Mix very well. Marinate chicken with 1/3 cup of dressing mixture for at least 1 hour. Refridgerate remaining dressing. The longer you marinate the chicken the better it is!
3 Cut tomatoes in half. Chop 1 head of romaine lettuce in ¼ inch pieces. Place in a large serving bowl, with enough room to toss salad.
4 Grill or pan fry chicken tenderloins. Put on plate and shred or cut into 1 inch pieces. Let cool until warm.
5 Combine lettuce, tomatoes, tortellini, and chicken to your serving bowl. Mix your remaining dressing and begin to toss into salad until it is covered with desired amount of dressing.
6 Serve with french bread baked your favorite way.
I will also add parmesean cheese, bacon bits, bell peppers, walnuts, ect. just to mix it up
