    Hungry Man's Casserole

    Not only has this been taste tested and approved, I am asked to bring it to all pot lucks I'm invited to. My family loves it and asks for it often. I learned to cook from my Grandmother, so excuse the sketchy measurements.

    Based on how many people you wish to feed add or decrease the measurements. As is, it makes a large pan that feeds my family of three twice.

    3 large cans of pork and beans
    1 large can seasoned bbq beans.
    1lb ground beef
    1 med onion, diced
    1 bell pepper, diced
    cumin - to taste
    black pepper- to taste
    spicy brown mustard. About 1/3 cup.
    2 cans of biscuts, not the flaky kind.
    1 lg bag shredded cheese

    Brown onion, pepper and ground beef in skillet. In a very large bowl, combine beans, mustard, spices, and browned meat mixture. Spread evenly in an casserole dish. Line biscuts in rows on top. Cover evenly with cheese. Bake in oven at 350 until biscuts are done and the cheese is bubbly and browned.

    Warning, people will go back for seconds!

    This was a tricky one, because the recipe itself was not very clear as ladyhrtcares4u stated.

    Flavor wise, I would give it an Excellent, but needs some better instructions and measurements.

    When I was done prepping, I had too much of everything for one casserole for me-- it was overflowing but I think it is because I just had way too many beans! I told the "large" cans to heart. And got LARGE cans! LOL With two packages of biscuits, it was too much, the ones in the middle did not cook. Had I split it into two casseroles I think it could have worked. But I still had way too many beans compared to hamburger.

    So here is what I would do, it was VERY tasty, just needs some alterations for the next time. I also found it was too much onion and bell pepper-- which is odd because I use those a LOT.

    2 cans Pork N Beans (15 oz size!)
    1 can BBQ beans (15 oz size!)
    1/4 c brown mustard
    1lb Hamburger-- maybe even two
    1/2 an onion diced small
    1/2 a bell pepper diced small
    1 can biscuits or preferably-- get the frozen kind in a bag by Pilsbury. Those cook in the oven for over 20 mins compared to the 11 minutes for the canned biscuits, I think it would give the dish more time to cure together, plus they are just bigger and flakier!

    When browning the hamburger, make sure the diced onion and bell pepper get cooked pretty well. Mine were way too crunchy.

    I am a bean-eatin' fool, and could survive without hamburger ever again... but this sounds tasty.

    May make it and take it to a Halloween party we have to go to this weekend.
