Bean Soup
Quick & Hearty Lunch-All-Week Soup
1 c frijoles negro, dry
.5 c white beans, navy?, dry
.25 steel cut oats, dry
.25 wheat berries or barley, dry
1 T flax meal
2 t each: chicken bullion dust, onion dust, garlic dust, smoked chipotle dust, coconut oil
4 c water
3/4 c leftover ham, diced small
1 3" link leftover, grilled, kielbasa-style sausage, slivered thin
Bring to boil. Reduce to slow simmer for 1.5 hours. About an hour into simmering uncovered, I realized I needed another .5 c water and to cover it.
I am throwing in a handful of spinach greens (fresh, raw) in each bowl as I ladle this out, because this is what I'll be eating all week at work while I work these horrid hours... And I wanted some greenery input.
I'll let y'all know if that ruins it! LOL!

Yum! I was surprised to see the grains thrown into the recipe...I like it!!

It turned out wonderful with the spinach included! I was very pleased with my little lunch today… Dear Hubby included a pita which did quite well sopping up the remainder left from my sopa.
Three more servings to go!
