Baked Potato Soup - Texas Style :)
Ingredients:
5 pounds of potatoes, peeled and diced
2 bunches green onions, sliced (these are optional)
16 ounce carton sour cream
1 – 1-1/2 pounds Velveeta, grated
Salt to taste
Pepper to taste
Paprika to taste
1 pound bacon, fried crispy and crumbled
Boil potatoes and green onions together until tender. Add sour cream, Velveeta, salt, pepper and bacon. Cook over medium heat until warm throughout. Add paprika for garnish
I personally do not include the green onions. This soup is super rich and tastes great, especially when served with cornbread.

It is one of our winter favorites. A soup that truly "fills you up"
With just hubby and I at home, I make the entire recipe as described above and then freeze half of it.
