Hamburger Zucchini Soup
Brown 1 lb. or more lean hamburger. Salt and pepper to taste.
Add 1 med. sized finely chopped onion and 2-4 cloves pressed garlic.
Add 1 14 oz can Italian recipe stewed pear tomatoes, not drained or 8 oz V8 juice., 1 32 oz beef broth, & 1 cup water.
Slice 2 med. carrots & 2 stalks of celery (include leaves). Quarter 10 baby red potatoes or 2 big ones cut to size. Add these to soup. Cook on low about 30 minutes.
Slice 4 small or 2 large zucchini; slice 1/2 pound mushrooms. Add to soup and cook 20 minutes more.
Add 1 can Delmonte Italian green beans, drained.
I add a couple of shakes of Mrs. Dash's Extra Spicey.
Cook 5 minutes.
