Taste Tested: Outback Steakhouse Potato Soup Recipe
**WINNER** Recipe of the Month August 2012
I have been a huge fan of Outback's Potato soup for years.... to be honest it was really the only thing that kept me going there! So for years and years I have tried to find the best soup 'copy cat' and never had any luck. But this one is an exact match. Thumbs WAYYYYYY UP! I ate so much I got a major tummy ache from being so full!
SERVES 8 or more:
6 large or 10 small golden potatos
1 onion, diced small
4 cans of chicken broth (14 oz)
1/4 to 1/2 tsp of Celery Salt (try 1/4 first, add more if desired)
1/4 tsp basil
1/2 tsp sugar
Pepper to taste
2 sticks of butter
3/4 c flour
1.5-2 c heavy whipping cream
10 pieces of fully cooked and crumbled bacon
8 green onions diced
2-3 cups of cheddar/Monterrey jack cheese blend
First of all, boil the potatoes, leaving skins on. Remove from heat when they are soft with a poke of a fork. Allow to cool for approx 1 hour.
Peel off the skins and discard skins.
In a large soup pot, melt your 2 sticks of butter slowly so it does not burn. Add in the diced onion and cook for about 10 minutes until softened. Add the flour slowly and continue stirring will it cooks. About 2-3 mins.
Very slowly add in each can of chicken broth while you continue to stir and use a wire whisk.
Gradually add the heavy cream (1.5 cups)
Slowly heat up the pot on low-med.
Meanwhile, dice up the potatos into bite size (small 1/4 to 1/2 inch) pieces. Add these to the soup.
Simmer and cook for about 30 mins, stirring often so that it does not burn at the bottom.
Pour soup into bowls and first top with cheese, then bacon and green onions. Serve with your favorite bread

Oh my gosh that sounds so good! I love my potato soup recipe but this one is so diff I think I have to try it too. Hope we get some more cool weather so I get a chance!

The best part is that it literally only costs about $10 or less to make, as I usually have all the ingredients and especially potatoes to use up. And it fed our family for two meals

I have been making this about every two weeks now, I peel the potatoes and then boil them. Makes it easier. Just don't overboil them or they will fall apart. Mine do a little, but having bits and pieces makes the soup more thick anyway

Oh my gosh I forgot about this one. I will be trying it now that the weather will let me eat soup.

Sounds luscious! I have saved it and will try it...
I love MY Potato Soup, but this has a couple things mine doesn't. We may have to adjust "my" recipe! LOL!
Come on, Fall!South Texas isn't tooooooo conducive to soup when it is durned near 100 outside.

YUMMY!!! Made this today. It turned out very good. I didn't have celery salt so I used fresh celery. I added smoked sausage to add some meat and make it a complete meal. Also added some garlic powder and sea salt to taste. It turned out very well. I've never had outback's soup and after trying this, I don't think I want to. Thanks for the recipe!
