    Did you make a ham this holiday and have a big hambone left?

    I did, so I put together this soup. I wrote down what I used because I did not really have a recipe for it! It turned out so so soooooo good!!!


    1 leftover ham bone. Hopefully you have also reserved any juices from when it was baked, if not make sure you do next time!

    Leftover ham chunks cut into tiny pieces, I use scissors
    1 package of beer brats cut into small pieces
    1 onion
    1 yellow bell pepper
    3 cans red kidney beans (you can use fresh but I did not think enough in advance to do so)

    1 can diced tomatos
    1 can RO TEL diced tomatoes and green chilis
    1 TBSP dried or fresh chives
    1 tsp black pepper
    2 boxes chicken stock
    2-3 cups water
    2 potatoes
    3 bay leaves
    1 fresh lemon


    In a large stock pot, empty 1 box of chicken stock, 3 bay leaves & 2 cups of water, and leftover ham bone. Heat to low boil for about 30 minutes to an hour.

    Remove bone and take off all good chunks of ham, cut all ham into small pieces. I use a scissor. Discard bone. Remove bay leaves.

    Dice up onion and bell pepper, cook on low in your stock until softened.

    Slice up your brats into tiny bite size pieces. I cut it into 1/4's first and then dice from there.

    Add to soup stock.



    Rinse your beans in a collandar to remove any bean gravy, especially if using canned beans.

    Add to soup stock.


    Add your two cans of diced tomatoes. The ROTEL add a bit of spice to the soup so I recommend it. You can also use fresh tomatoes instead of canned. If using tomatoes I would add 4 diced.

    Add in your ham pieces, pepper and chives. I found this needed NO salt, the ham gave it plenty but I also had at least a half cup of reserve juices from baking. Without that I am not sure if you would need to add some. So season to taste.

    Last add in your potatoes, skin on or off, your preference. I kept them on.

    Cook on low boil for about 20-30 minutes. Add more water if the stock is too rich.

    Serve with a fresh lemon slice and garlic bread.

    Ahhh, I am a Ham & Beans kinda gal... we save the HoneyBaked bone in the freezer, with enough meat to make 3-4 vats of beans throughout the Winter!

    You add some goodies that I normally don't, so I will try out some of your ingredients next time I'm makin' beans!
    (Don'tcha LOVE Ro*Tel? Cheap and amazing little can!)
