Mojito
I'm lucky and have a fresh mint plant... Which beckons me to make Mojitos alllllll the time!
Sprig of Mint
Sugar to taste (one of my few sweet moments, 2 T!)
Big lime
Ice cubes in two little glasses
Hot water to dissolve sugar
Rum (I prefer dark)
Bruise the mint in the sugar granules.
Squeeze in lime and then Hot (tap hot) water in sugar to make about 3/4 c
Add 1/4 c RUM
(Dear Hubby likes the mint bits, daughter doesn't. Skim if you've a picky person, leave in for authenticity and breath freshening when the alcohol discussions ensue...)
Pour over ice. ENJOYYYYYY!

Re: Mojito
Fresh mint!! I just bought a plant this morning from the Farmer's Market AND, i just discovered there's fresh mint growing in my backyard. I think all that is a sign that I must make a mojito in the very near future (like, tomorrow) !

It makes a double, in a small glass. If you're only one person drinking, put half of it in the fridge to chill… awaiting your second go-round!

I've almost stripped my mint plant bare... Think I need to give him a break from Mojito Duty!
