Marinated Fish in Coconut Cream (American Samoa)
I wasn't sure I would like this, but found it oddly appealing. The texture of the fish was luxurious and really goes well with the sweetness of the coconut cream.
Marinated Fish in Coconut Cream (American Samoa)Ingredients
1 pound firm white fish fillet (such as halibut or flounder or cod)
1 teaspoon salt
1/2 cup fresh squeezed lemon juice
2 tomatoes, diced
1 onion, finely chopped
1/2 cup cucumber, chopped
1/2 cup coconut cream, or to taste
Instructions
Cut the fish into smallish bite-sized cubes. Season with salt, then sprinkle with lemon juice. Cover, refrigerate, and let marinate 2 hours up to overnight (I like the texture after marinating overnight, personally). Stir occasionally.
Stir in onions, tomatoes, cucumber. Garnish with lemon slices.

The coconut cream is an interesting ingredient for this recipe. This dish seems like it would make a great accompaniment to my daily dose of spinach salad!
