    Fish Sticks




    I've been craving fish sticks...like with a capital C ! Remember the ones you ate as a kid, found in the frozen food section? Those are the kind I'm talking about

    So I was very pleased when I found this recipe for a healthier version of fish sticks. I plan on putting this on my list of recipes to try for the coming weekend.
    (notice how the metric system of measurement is used...so if you have a food scale, now's the time to use it for this recipe)!

    Ingredients (3 servings = +-9 fish sticks)

    Fish sticks:

    350 g cod fillets (or other fish), cut into the size of fish sticks

    A bit flour (I used wholemeal but you can use the flour you want)
    1 egg, beaten
    A bit Panko (Japanese breadcrumb) (or normal or oats,…)
    fresh black pepper and salt


    Dip:
    125g low fat natural yogurt
    Parsley, fresh black pepper and salt


    Directions for Fishsticks:

    Place flour and egg in separate shallow bowls.
    In another shallow bowl, combine bread crumbs and seasonings.
    Dip fish in the flour, then egg, then roll in the crumb mixture.
    Place on a baking sheet coated with cooking spray.
    Bake at 200°C for 18-20 minutes.
    (this is equal to 392 degrees Farenheit...so maybe round up to 400F).

    Dip:
    Mix all ingredients together


    Nutritional facts fish sticks (1 serving = +-2 fish sticks)
    Energy: 136 cal
    Protein: 22.5 g
    Carbohydrates: 4.8 g (sugar 0.4 g)
    Fat: 3 g (saturated 0.7 g)
    Fiber: 0.3 g
    Nutritional facts dip (1serving):
    Energy: 13 cal
    Protein: 1.4 g
    Carbohydrates: 1.8 g (sugar 1.6 g)
    Fat: 0 g (saturated 0 g)
    Fiber: 0 g

    I used to LOVE Fishstix until I figured out the ingredients in those boxed ones... Eek!

    YIKES, i was just re-reading this recipe I posted and noticed it said "a bit of flour", "a bit of Panko"...What the heck??!! I'm going to post another recipe I found that's a bit more precise. Anyways, I didn't end up quenching my fish stix craving over the wknd...but soon tho! I will post the new recipe once I make it

    K just made this for dinner. Yum!! I used a bowl with a random amount of flour and a bowl, of a random amount Of panko (had to get more panko half way thru) and it turned out very good! I added some extra spices to the flour and panko although I bought the Italian seasoned panko to begin with. I also made a Louie dressing that I found online as a dipper and LOVED it. will post that one in a bit.

    Oh, I'm so glad you made this!!! Also happy it turned out fine for you. Okay, going to need to thaw that cod this weekend!! Did you use cod too?

    Yes I did use cod. It was on sale so I bought some yesterday. Love how easy this was and it got me to eat fish, something I forget to do. Thinking using plain panko seasoned heavily with my spices would taste better since Italian seasoning didn't go perfectly. I hear hubby in the kitchen finishing off the leftovers now. think it was a hit.
