    Shrimp in Garlic Oil aka Gambas Al Ajillo



    I first had this in Spain as a tapa and couldnít get enough. After trying sooo many times to get the garlic to oil ratio correct, I finally got it.
    But as always, you can use more or less garlic or lemon depending on your preference.

    This has to be one of my favorite shrimp recipes and itís ridiculous how easy it is.

    1 Ĺ pounds of extra large or jumbo shrimp peeled and deveined
    A little less than Ĺ cup of a good quality extra virgin olive oil (I use Partanna)
    6 large garlic cloves minced (or 7 )
    1 or 2 teaspoons of a freshly squeezed lemon (this really depends on your taste but donít use too much or it will overwhelm the dish).
    A sprinkle of Red Pepper Flakes for a little heat.
    1 to 2 teaspoons of flat leaf parsley, chopped
    Fresh crusty bread to soak up the garlic oil up with! (I think this is the best part)



    Pour olive oil into pan and add garlic and red pepper flakes.
    Sautee on low-medium heat for 1-2 minutes or until oil is fragrant. I stir the whole time to keep the garlic from burning. Donít let it brown.
    (DO NOT BURN THE GARLIC or youíll need to start over).
    Raise heat to a medium
    Add Shrimp and lemon juice, stir to make sure all the shrimp are covered in the oil, and cook until shrimp are cooked through, about 3-5 minutes.
    Add chopped parsley to the shrimp.
    Serve with the fresh crusty bread for dipping.


    If you're a garlic and shrimp lover, this is the best thing ever!

    Oh, I had to correct the recipe, it's 6 garlic cloves minced". I left out the "minced" part earlier.. oops.

    just made this again for dinner and added pic. oh my god.. sooo delicious.. lol..
