    Fish of many kinds...




    I have been on a fish kick lately, and have made this in a variety of ways.

    Fish
    Butter
    Lemon
    Garlic or Chipotle

    I've fixed it in little individual foil packets, in a plain ol' Corelle baking dish, and unsuccessfully (didn't simmer in its juices enough, as it melted off) on a raised rack to broil.

    Pick a mild fish. Add ingredients. 350-375 until flaky. Takes 30-45 minutes depending on quantity, thickness, and if they are touching each other. Individual foil packets cooked fastest. A covered Corelle dish was the slowest, but most tasty version.

    I've done it with salmon, tilapia, grouper, orange roughie, cod...

    Sometimes I layer slices of lemon underneath, lay the fish on top, drop pats of butter on the fillets, dust with mild seasoning lightly.
    Sometimes, I lay the fish on the bottom and just juice a lemon over it, then continue as above. Any version comes out light and tasty.

    That's sounds good @TracInTexas

    I often put fish I foil with a knob of butter and diced onion and tomato and slices of lemon I use reef fish

    Yum I love fish but my husband hates it until I make him eat it. Then he loves it. Until I tell him I am making fish again and he says "no! I am don't like fish!" I swear I will never win the argument that he likes it!

    Don was that way with asparagus... He finally had admitted that it's "OK" and then he snarfs up 3/4 of the dish! SMH

    I dated a guy for a while who claimed to "be allergic" to anything green... Yeah, we weren't a good match, were we!?
