Seafood, Asparagus and Swiss quiche
2 pie shells
8 oz package sliced Swiss cheese
8 oz package shredded Swiss cheese
6 eggs
1 can evaporated milk
1 lb. cooked asparagus chopped into bite sized pieces
3 artificial crab "legs" (or real would be even better) chopped up
12 medium sized shrimp cut into bite sized pieces
1 Tbsp flour
1/2 tsp Cajun shrimp seasoning
1/2 tsp paprika
Salt & pepper To Taste
Line pie crusts with Swiss cheese slices.
In large bowl, beat eggs and spices together mix in everything else
Pour/spoon into lined pie crusts
Bake @ 350* about an hour, or until golden brown. Let set 10 minutes before Serving
Options, I might add onions next time. I also think that Emeril's essence in place of the Cajun seasoning would be good, but I had the Cajun seasoning on hand when I made this up last week. I also think broccoli would work well in place of the asparagus.Last edited by LariP; 01-20-2013 at 03:39 PM.

Looks good. Just not the cajun part. Not a big cajun fan.

It's not hot or overly spicy at all using the Cajun seasoning. But you could just use s/p to taste too if you prefer.
