    Curried prawns (shrimp)

    ***May 2013 Sensational Seafood Dish Winner!!!***

    1 Kg green Prawns
    60g butter or margarine
    1 tablespoon curry paste
    2 sticks celery sliced
    1lg onion chopped
    1/2 green pepper chopped
    1 med tomatoe chopped
    4 tablespoons flour
    salt and pepper
    1& 1/2 cups water
    1 cup milk
    2 chicken stock cubes
    1 teaspoon sugar
    1 tablespoon lemon juice

    Melt butter in pan add curry powder, chopped celery, onion and pepper saute gently 2 - 3 minutes, add chopped tomatoe and cook further 2 minutes, take off heat and stir in flour, salt and pepper, cook for 1 minute gradually add water and milk and stock cubes. Continue stirring until sauce boils and thickens.
    Reduce heat, add sugar and lemon juice simmer for 20 - 25 minutes stirring occasionaly.
    Add prawns and allow to just coo through do not over cook them ( if using cooked prawns just heat through)
    Serve with hot steamed rice.

    Gluten and Dairy free option
    use Gluten free flour or rice flour and Rice milk along with gluten and dairy free margarine and use gluten free stock cubes.
