    Italian Lemon Butter Peel and Eat Shrimp




    ***February 2013 Recipe of the Month Winner!***

    2 lb uncooked de-veined but un-peeled shrimp
    two lemons sliced thin
    1 1/2 to two sticks butter.
    italian seasoning


    Melt one stick of the butter in a glass casserole dish.
    Lay out the lemon slices from one of the lemons in the bottom of the dish.
    Place shrimp over the lemons
    lay the other lemon slices randomly over the shrimp and a few thin pats of butter sliced over the shrimp too.
    Sprinkle generously with italian seasoning.

    Bake @350* 15 minutes. Use tongs turn and stir up the shrimp a bit so some of what's down in the butter gets moved up and some of what's on top gets down in the butter.
    Bake 10 to 15 minutes longer or until shrimp is nicely pink.


    Ladle out lemon butter from dish into ramekins for dipping.
    Serve with rice. (A little of the lemon butter ladled on the rice is very nice)
    Peel and Eat and ENJOY!

    This looks, great! gonna have to go hit up the local shrimp guys!! This is one good think about living here in coastal NC!! We used to go catch our own shrimp with a cast net, but the good area is so popular now u have to get there a few hours ahead a just sit in your spot if your gonna net any!! We decided to skip out this yr on catching and have just been buying from the shrimp fisherman! Still good and fresh!

    It is actually quite fun, Once you get the hang of the cast net!!! We also are able to get blue crabs too! I don't net those, i'm afraid of getting pinched!! LOL, my husband and a friend went out one day caught a ton of blue crab and shrimp, we came home and had a good ole crab boil, nothing like fresh from the water to your table!!

    We used to cast net on the Gulf Coast, but I've not been in years...
    Looking forward to going next Summer!
