    Italian Lemon Butter Peel and Eat Shrimp

    Italian Lemon Butter Peel and Eat Shrimp



    ***February 2013 Recipe of the Month Winner!***

    2 lb uncooked de-veined but un-peeled shrimp
    two lemons sliced thin
    1 1/2 to two sticks butter.
    italian seasoning


    Melt one stick of the butter in a glass casserole dish.
    Lay out the lemon slices from one of the lemons in the bottom of the dish.
    Place shrimp over the lemons
    lay the other lemon slices randomly over the shrimp and a few thin pats of butter sliced over the shrimp too.
    Sprinkle generously with italian seasoning.

    Bake @350* 15 minutes. Use tongs turn and stir up the shrimp a bit so some of what's down in the butter gets moved up and some of what's on top gets down in the butter.
    Bake 10 to 15 minutes longer or until shrimp is nicely pink.


    Ladle out lemon butter from dish into ramekins for dipping.
    Serve with rice. (A little of the lemon butter ladled on the rice is very nice)
    Peel and Eat and ENJOY!

    It really is as simple as it sounds Henny. The picture is what we had for dinner last night.

    I found the original recipe on Pinterest, and the pictures there showed already cooked shrimp and said to cook about 15 minutes total.
    The directions while easy to follow, were not quite explicit enough. I believe it was calling for using the Good Season's Italian dressing mix because it called for a packet of Italian Seasoning.

    I just used Italian Seasoning and sprinkled it liberally.

    We both really enjoyed it the way I made it though, so that's what I typed out above.

    We had friends over for dinner Friday night. Since shrimp is Marcia's favorite food we had this with rice and a side of steamed Broccoli and Cauliflower. It is so easy to prepare that it made it where I really didn't have to spend much time in the kitchen during "cocktail hour".

    Making this tonight!

    Don't care for "Italian Seasoning" so I am substituting some fresh garlic chive off of the back patio, and some coarse ground black pepper instead...

    I found a bag of Frozen Vietnamese Black Zebra Prawns at Costco today -- they're HUGE! And it made me think of this recipe.

    I cut the recipe in half, because there's just the two of us. Using about 3/4 of a stick of butter and one huge Meyer lemon.

    They were huge shrimp, so it ended up about 10 shrimp each… It was everything I could do to poke my last one in!

    Love your pictures Tracy! We actually had this for dinner again last night too. Just Bruce and I ate the whole 2 lbs of shrimp....but we had it with nothing else on the side..just pigged out on the shrimp this time.

    Thats what we did... Nothing with it, not even a dollop of rice! LOL! ITS ~THAT~ GOOD!
