    Mashed Potato Veggie Strata

    2-3 lbs. Yukon gold or red potatoes
    1/2 cup roasted red sweet peppers
    8 oz. carton sour cream
    1/4 t. salt
    2 med. zucchini, halved lengthwise & sliced
    1 med. yellow summer squash halved lengthwise and sliced
    1 chopped red bell pepper
    1 chopped yellow bell pepper
    1 chopped green or orange bell pepper
    1 onion, chopped
    1 T olive oil
    1/2 t. salt
    8 oz. shredded cheddar cheese (2 cups)

    Preheat oven to 350. Lightly coat a 3 qt. rectangular baking dish with nonstick cooking spray. Cook potatoes, drain and mash. I use butter and milk, I also put in a couple cloves of pressed garlic. Spread mashed potatoes evenly in baking dish.

    Blend roasted sweet peppers until smooth. Add sour cream and 1/4 t. salt. Stir until smooth and spread over mashed potatoes.

    In a 12" skillet cook zucchini, yellow squash, peppers and onion in hot oil over med. heat until crisp/tender. Season with 1/2 t. salt. Spoon veggies on roasted pepper layer. Sprinkle with cheese. Bake uncovered 30 min. Let stand 10 min. before serving.
