Tomato Pie
This is a great way to use a bunch of garden tomatoes!
1 Deep Dish Pie Crust
4 cups tomatoes, sliced
1/2 cup chopped fresh basil
3 green onions, chopped
1/2 tsp garlic powder
1 tsp dried oregano
1/2 tsp crushed red pepper
2 cups shredded cheddar
1/4 cup mayo
Heat oven to 375 F. Pre-bake pie crust 10 min. In pie crust, layer tomatoes, basil, green onions, and seasonings. Mix mayo with cheese and spread on top of tomato layer. Cover with foil. Bake 30 min, then remove foil. Bake another 30 min. Serve hot or cold.
Notes: 1) This is a vegetarian recipe but feel free to add cooked bacon or sausage to make it meaty.
2) Tomatoes will make it a little watery, so before assembling, you can slice tomatoes and sprinkle with some salt, then set on a rack to drain a bit of liquid. I do this and also siphon off some liquid while cooking when I check on it.
3) I have also made this adding chunks of fresh mozzarella in the tomato layer and instead of the cheddar cheese, I will use shredded provolone.Last edited by LariP; 01-20-2013 at 07:41 PM.

OMG SOunds great except I hate mayo I usually switch it for sour cream. Wonder if that would work here.
