    YTBT: Shrimp Recipes




    We came home from the Gulf with about 10 lbs of fresh shrimp.
    I'm going to post up my "in works" recipes here and move them to the final posting place if they turn out well.

    Tonight, I am inventing something from two recipes I found that both sounded good - but both had something I didn't care for... LOL!

    I received a big Fennel in my delivery of veggies, and have been dying to try it out -- because its used in so many Mediterranean recipes. And I love Middle Eastern/Med food!

    Beta Testing: Shrimp with Fennel Root

    18 colossal size shrimp - big guys - tails Off, de-veined
    1 teaspoon red pepper flakes
    1 tablespoon chopped fresh oregano or 1 teaspoon dried
    Salt and freshly ground black pepper
    2 lemons, juiced
    4 cloves garlic, powder or fresh
    1/4 cup extra-virgin olive oi

    1 fennel bulb, cored and cut into 2-inch-long strips (about 3 cups), float in water until you're ready for it.

    Place shrimp in a bowl and season with red pepper flakes, lots of salt and pepper. Add garlic and oil and toss to coat shrimp evenly. Set aside. Toss occasionally.

    Juice lemons, and set aside.

    ***** Company arrived unannounced, so here I sit... *****

    Heat oil in a large skillet over medium heat. Add fennel & garlic, cook, stirring occasionally, until starting to brown, 6 to 8 minutes.

    Increase heat on pan to medium-high.

    Add shrimp and cook, stirring occasionally, until pink and just cooked through, about 4 minutes, until pink and firm, douse pan with the juice of 2 lemons and serve immediately.

ID:	631 turned out pretty well. Very tasty, a little blah like it needed a bit more red pepper and another clove of garlic.
    Other than THAT -- it was orgasmic! As in: I caught Donger licking his plate!!
    I'll adjust the recipe a bit.

    Silly me... somehow I used 3/4 of the garlic called for in the recipe -- no wonder I thought it needed more.

    LOL! I am one of those who does 100-150% of what it calls for, and adjusts from there! Also the same on the spicy scale -- 100-150% and go from there!

    OK... researching the next Shrimp recipe, I find quite a few refer to a "Cajun Seasoning" for which I cannot find, or haven't bothered looking well enough, in South Texas where Chipotle is KING. Shreveport is only about 8 hours away, and New Orleans is about 6 -- but no Cajun Seasoning here. :-\

    Cajun Seasoning
    2 teaspoons white pepper
    2 teaspoons garlic powder
    2 teaspoons onion powder
    2 teaspoons cayenne pepper
    2 teaspoons paprika
    2 teaspoons ground black pepper
    Mix. Seal well in jar. [Can be made in bigger batches, as all the measures are equal parts of each ingredient.]

    Shrimpin Dippin Broth - Bubba Gump Shrimp Co.

    Ingredients

      • 1 lb medium shrimp, peeled and deveined ( frozen is okay)
      • 1 fresh baguette
      • 1 cup cooked white rice
      • lemon wedges (optional)
      • 2 tablespoons butter
      • 1/2 tablespoon Worcestershire sauce
      • 1 teaspoon black pepper
      • 1 teaspoon cajun seasoning
      • 1/2 tablespoon minced garlic

      INGREDIENTS FOR THE BROTH

      • 1/2 tablespoon butter
      • 12 ounces clam juice
      • 1 teaspoon Worcestershire sauce
      • 1/2 teaspoon pepper
      • 1/2 teaspoon cajun seasoning
      • 1 teaspoon minced garlic
      • 1 chicken bouillon cubes
      • 1/4 teaspoon sugar




    Directions

    1. To prepare the broth:.
    2. Sauté pepper, Cajun seasoning, and garlic in butter for approximately 5 minutes over medium heat.
    3. Add remaining ingredients.
    4. Bring to boil.
    5. Turn down to simmer and leave on stove until ready to serve.
    6. Shrimp preparation:.
    7. Melt butter in pan and add shrimp, Worcestershire sauce, pepper, Cajun seasoning and garlic, and cook to medium rare.
    8. Add the broth and bring to a simmer.
    9. Serve in large bowl over rice with baguette and lemon wedges.

This is one of the most delicious Shrimp recipes. I love it because you get plenty of broth to sop up with your bread, and it's SO flavorful. Definitely Cajun, so not for people who don't like spicy food. Enjoy & please post reviews! Cooking time may vary, based on type of rice you choose to serve, so cooking time does not include rice cooking time. Preparation time assumes you have shrimp that has been peeled and deveined for you. Cooks very quickly! I made this recently and doubled it, but I found that the flavor was diluted. If anyone makes this and is able to successfully double/triple the recipe with the same amount of flavor, pls post in your comment/review. I personally would like to have MORE broth than what this makes just like you get at the restaurant. It is spicy!"

    SEAFOOD PASTA, BUBBA'S SPICY CREAMY PASTA

    About This Recipe

    "One of Bubba's recipes that is fabulous and by the way it's Paula Dean's brother and a very good cook also."

    Ingredients



      • 2 tablespoons olive oil
      • 2 garlic cloves, minced
      • 1/2 cup vodka
      • 1 (14 ounce) cans crushed tomatoes
      • 1/2 cup heavy cream
      • 1/2 teaspoon red pepper flakes
      • 1/8 teaspoon salt
      • 1/8 teaspoon black pepper
      • 1/2 lb bay scallops
      • 1/2 lb large shrimp, peeled deveined
      • 1 lb uncooked linguine



    Directions


    1. Heat oil in a large cast iron skillet over medium heat. Add the garlic and cook for 2 minutes. Add the vodka and reduce the vodka by 1/2. Add the tomatoes,cream,pepper flakes, salt and pepper to taste. Cook stirring occasionally for 2-3 minutes or until thick, it will turn reddish orange.
    2. Cook the pasta in a large pot of salted water according to the package instructions.Do not over cook! Drain and transfer to a large bowl,pour the sauce over the pasta,toss to combine. Serve immediately.

    Mmmmm you r killin me here! No Cajun seasoning?! Wow. Homemade seasoning would probably be best anyhow, less salt. I love shrimp!

    You are right about the salt! My cajun seasoning's number one ingredient is salt! But we do love it, especially on shrimp.

    Yeahhh, I cannot do salt much -- my eyes puff up incredibly with water retention.
    I have Tony Cachere's, but I get the "More Spice/Less Salt" version... and from the ingredients, it appears to be very Tony-like!

    The shrimp gorging has been put on hiatus. Yesterday was my birthday, his birthday and our anniversary (Big #5!) so we have been doing other grazing. Probably back to home-cooked tonight!

    Hm. We still have a couple pounds of the Gulf Shrimp left... I need to revisit this!
    I've Fridays off for the rest of the Summer, so I will re-look at some good recipes for Shrimpies.

    Highly recommend my ceviche recipe. Made it again for Father's Day and it got gobbled up.
