Ingredients
• 4 boneless, skinless chicken breasts
• 8 slices of bacon, cooked and crumbled
• 1 cup shredded Monterey Jack cheese
• 1 cup sliced fresh mushrooms
• 1/2 cup honey mustard dressing
• 2 tablespoons butter
• 1 teaspoon garlic powder
• Salt and pepper to taste
Instructions
• Step 1: Preheat your oven to 375°F (190°C). Season the chicken breasts with garlic powder, salt, and pepper.
• Step 2: In a large skillet, cook the bacon over medium heat until crispy. Drain and crumble the bacon, reserving 2 tablespoons of the bacon grease in the pan.
• Step 3: Add the chicken breasts to the pan with the bacon grease and sear them for 3-4 minutes per side, or until they’re golden brown.
• Step 4: Transfer the seared chicken to a baking dish. Top each chicken breast with the crumbled bacon, sliced mushrooms, and shredded Monterey Jack cheese.
• Step 5: Drizzle the honey mustard dressing over the top of the chicken and cheese, then dot the top with small pieces of butter.
• Step 6: Bake the Alice Springs Chicken in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
