Almond Croissant Baked Oats

Ingredients

• 2 cups old-fashioned oats
• 1/2 cup sliced almonds, plus more for topping
• 1/4 cup brown sugar
• 1 teaspoon baking powder
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 1 1/2 cups unsweetened almond milk
• 1 large egg
• 2 tablespoons unsalted butter, melted
• 1 teaspoon vanilla extract


Instructions

• Step 1: Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or individual ramekins with non-stick cooking spray or butter.
• Step 2: In a large mixing bowl, combine the old-fashioned oats, 1/2 cup of sliced almonds, brown sugar, baking powder, cinnamon, and salt. Stir to mix well.
• Step 3: In a separate bowl, whisk together the almond milk, egg, melted butter, and vanilla extract until fully combined.
• Step 4: Pour the almond milk mixture into the oat mixture and stir until well incorporated.
• Step 5: Transfer the oat mixture to the prepared baking dish or ramekins. Sprinkle the top with additional sliced almonds.
• Step 6: Bake for 25-30 minutes, or until the oats are set and the top is golden brown. Let cool for 5 minutes before serving.
