• 1 lb (450g) thick-cut bacon, diced
• 1 large onion, diced
• 3 cloves garlic, minced
• 1/2 cup (100g) brown sugar
• 1/4 cup (60ml) apple cider vinegar
• 2 tablespoons (30ml) balsamic vinegar
• 1 teaspoon (5ml) Dijon mustard
• 1 teaspoon (5ml) fresh thyme leaves
• 1/2 teaspoon (2.5ml) black pepper
• 1/4 teaspoon (1.25ml) cayenne pepper (optional, for a kick of heat)
Instructions
- Cook the Bacon: In a large skillet over medium-high heat, cook the diced bacon until crispy, about 8-10 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, reserving the bacon fat in the pan.
- Caramelize the Onions: Reduce the heat to medium-low and add the diced onions to the bacon fat. Cook the onions, stirring occasionally, until they are softened and caramelized, about 15-20 minutes.
- Add the Flavors: Stir in the minced garlic and cook for 1 minute, until fragrant. Then, add the brown sugar, apple cider vinegar, balsamic vinegar, Dijon mustard, thyme, black pepper, and cayenne pepper (if using). Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, until the mixture has thickened and the flavors have melded.
- Finish the Jam: Add the cooked bacon back to the pan and stir to combine. Continue to cook for 5-10 minutes, until the jam has reached your desired consistency. Taste and adjust seasonings as needed.
- Let it Cool: Remove the pan from the heat and let the bacon jam cool slightly before transferring it to an airtight container. Refrigerate the jam for at least 2 hours, or until it has thickened to your preferred texture.
