• 3 pounds Yukon Gold potatoes, cut into 1-inch cubes
• 1/4 cup olive oil
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 8 ounces block feta cheese, cut into 1-inch cubes
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
• Step 2: In a large bowl, toss the cubed potatoes with the olive oil, garlic powder, dried oregano, salt, and black pepper until the potatoes are evenly coated.
• Step 3: Spread the seasoned potato cubes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
• Step 4: Remove the baking sheet from the oven and gently toss the roasted potatoes with the cubed feta cheese. Return the sheet to the oven and bake for an additional 10-15 minutes, or until the feta is melted and the edges are lightly browned.
• Step 5: Serve the baked feta potatoes hot, garnished with fresh parsley or oregano, if desired.
