Ingredients

• 3 ripe bananas, mashed
• 1 cup all-purpose flour

• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1/2 cup milk
• 1 egg, beaten
• 2 tablespoons vegetable oil, plus more for frying


Instructions

• Step 1: In a large mixing bowl, mash the ripe bananas until smooth and creamy.
• Step 2: In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
• Step 3: Add the milk and beaten egg to the mashed bananas and stir until well combined.
• Step 4: Gradually fold the dry ingredients into the wet ingredients, mixing just until a thick batter forms. Avoid overmixing.
• Step 5: In a large skillet or Dutch oven, heat 1/2 inch of vegetable oil over medium-high heat.
• Step 6: Using a spoon or small ice cream scoop, carefully drop heaping tablespoons of the batter into the hot oil, frying in batches to avoid overcrowding.
• Step 7: Fry the fritters for 2-3 minutes per side, or until golden brown and crispy.
• Step 8: Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
