Ingredients

• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
• 1 cup all-purpose flour
• 2 eggs, beaten
• 1 cup panko breadcrumbs
• 2 tablespoons vegetable oil
• 1 cup shredded cabbage
• 1 cup shredded carrots
• 2 green onions, sliced
• 1/2 cup mayonnaise
• 2 tablespoons Sriracha sauce
• 1 tablespoon honey
• 1 tablespoon rice vinegar
• Salt and pepper to taste


Instructions

• Step 1: Prepare the chicken by cutting the breasts into 1-inch cubes. Set up a breading station with the flour, beaten eggs, and panko breadcrumbs in separate bowls.
• Step 2: Dredge the chicken cubes in the flour, dip them in the beaten eggs, and then coat them in the panko breadcrumbs, pressing gently to adhere.
• Step 3: In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded chicken in batches for 2-3 minutes per side, until golden brown and cooked through. Drain on a paper towel-lined plate.
• Step 4: In a small bowl, whisk together the mayonnaise, Sriracha, honey, and rice vinegar to make the Bang Bang sauce. Season with salt and pepper to taste.
• Step 5: In a large bowl, combine the shredded cabbage, carrots, and sliced green onions.
