Ingredients
• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
• 1 cup all-purpose flour
• 2 eggs, beaten
• 1 cup panko breadcrumbs
• 1/2 cup mayonnaise
• 1/4 cup Sriracha sauce
• 2 tablespoons honey
• 1 tablespoon rice vinegar
• 12 slider buns or dinner rolls, split in half
Instructions
• Step 1: In a shallow bowl, combine the flour. In a separate shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.
• Step 2: Dredge the chicken cubes in the flour, dip them in the beaten eggs, and then coat them in the panko breadcrumbs, pressing gently to help the breadcrumbs adhere.
• Step 3: In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Fry the breaded chicken in batches for 2-3 minutes per side, or until golden brown and cooked through. Drain on a paper towel-lined plate.
• Step 4: In a small bowl, whisk together the mayonnaise, Sriracha, honey, and rice vinegar to make the bang bang sauce.
• Step 5: Assemble the sliders by placing a piece of fried chicken on the bottom half of each slider bun. Drizzle or spoon the bang bang sauce over the chicken. Top with the remaining bun halves.
