Irresistible Bang Bang Shrimp Pasta

Ingredients

• 1 lb linguine or fettuccine pasta
• 1 lb large shrimp, peeled and deveined
• 1 cup all-purpose flour
• 2 eggs, beaten
• 1 cup panko breadcrumbs
• 1/2 cup mayonnaise
• 2 tablespoons sweet chili sauce
• 1 tablespoon Sriracha (or other hot sauce)
• 1 tablespoon lime juice
• 2 tablespoons butter
• 2 cloves garlic, minced
• 1 cup heavy cream
• 1/4 cup grated Parmesan cheese
• Salt and pepper to taste
• Chopped green onions, for garnish


Instructions

• Step 1: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
• Step 2: In a shallow bowl, combine the flour. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs. Dredge the shrimp in the flour, then dip in the beaten eggs, and finally coat in the panko breadcrumbs.
• Step 3: In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Fry the breaded shrimp in batches for 2-3 minutes per side until golden brown and crispy. Drain on a paper towel-lined plate.
• Step 4: In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute until fragrant. Whisk in the heavy cream, mayonnaise, sweet chili sauce, Sriracha, and lime juice. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
• Step 5: Add the cooked pasta and fried shrimp to the sauce, tossing to coat evenly. Sprinkle with Parmesan cheese and season with salt and pepper to taste.
• Step 6: Serve immediately, garnished with chopped green onions. Enjoy!
