Indulgent Bang Bang Shrimp Pasta

Ingredients

• 1 lb linguine or fettuccine pasta
• 1 lb large shrimp, peeled and deveined
• 1/2 cup all-purpose flour
• 2 eggs, beaten
• 1 cup panko breadcrumbs
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1/2 cup mayonnaise
• 2 tablespoons sweet chili sauce
• 1 tablespoon Sriracha (or more to taste)
• 1 tablespoon honey
• Salt and pepper to taste
• Chopped green onions, for garnish (optional)


Instructions

• Step 1: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
• Step 2: Set up a breading station with three shallow dishes: one with the flour, one with the beaten eggs, and one with the panko breadcrumbs. Dredge the shrimp first in the flour, then the eggs, and finally the panko, pressing gently to adhere.
• Step 3: In a large skillet, heat the olive oil over medium-high heat. Working in batches, fry the breaded shrimp for 2-3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
• Step 4: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and honey. Season with salt and pepper to taste.
• Step 5: Add the cooked pasta and fried shrimp to the sauce and toss gently to coat evenly. Garnish with chopped green onions, if desired.
