Ingredients
• 3 pounds beef chuck roast or brisket, cut into 2-inch cubes
• 4 chipotle chiles in adobo sauce, minced
• 1 white onion, diced
• 6 cloves garlic, minced
• 2 tablespoons apple cider vinegar
• 1 tablespoon ground cumin
• 1 tablespoon dried oregano
• 1 teaspoon ground cloves
• 1 teaspoon ground cinnamon
• 1 cup beef broth
• Salt and black pepper to taste
Instructions
• Step 1: In a large, heavy-bottomed pot or Dutch oven, combine the beef cubes, chipotle chiles, onion, garlic, apple cider vinegar, cumin, oregano, cloves, and cinnamon. Season with salt and black pepper to taste.
• Step 2: Pour in the beef broth and stir to combine all the ingredients. Cover the pot and place it in a preheated 300°F oven.
• Step 3: Cook the barbacoa beef for 3 to 4 hours, or until the meat is extremely tender and can be easily shredded with a fork.
• Step 4: Remove the pot from the oven and use two forks to shred the beef directly in the cooking liquid. Taste and adjust seasoning as needed.
• Step 5: Serve the barbacoa beef warm, with your favorite toppings and accompaniments.
