• 4 boneless, skinless chicken breasts
• 1/2 cup BBQ sauce
• 1 head romaine lettuce, chopped
• 1 cup cherry tomatoes, halved
• 1/2 cup shredded cheddar cheese
• 4 slices bacon, cooked and crumbled
• 1 cup croutons
• 1/2 cup Ranch dressing (homemade or store-bought)
Instructions
• Step 1: Preheat your grill or grill pan to medium-high heat. In a shallow dish, combine the chicken breasts and BBQ sauce, making sure the chicken is evenly coated. Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F. Allow the chicken to rest for 5 minutes, then slice or chop it into bite-sized pieces.
• Step 2: In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, crumbled bacon, and croutons. Add the grilled and chopped BBQ chicken.
• Step 3: Drizzle the ranch dressing over the salad and toss gently to coat all the ingredients.
