Instructions
- Season the Beef: In a large skillet over medium-high heat, cook the ground beef, breaking it up with a wooden spoon as it cooks, until no longer pink, about 5-7 minutes. Drain any excess fat, then add the chili powder, cumin, garlic powder, onion powder, cayenne (if using), salt, and black pepper. Stir to combine and let the beef continue cooking for an additional 2-3 minutes to allow the flavors to meld.
- Assemble the Taquitos: Lay the corn tortillas on a clean work surface. Spoon about 2-3 tablespoons of the seasoned beef filling onto the lower third of each tortilla, then top with a generous pinch of shredded cheese. Carefully roll the tortilla tightly around the filling, securing it with a toothpick.
- Fry the Taquitos: In a large skillet or Dutch oven, heat about 1/2 inch of vegetable oil over medium-high heat.
