Ingredients
• 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
• 8 oz cremini mushrooms, sliced
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 onion, diced
• 2 tablespoons soy sauce
• 2 tablespoons black pepper
• 1 cup chicken broth
• 2 tablespoons cornstarch
• Salt to taste
Instructions
• Step 1: In a large skillet or wok, heat the olive oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until translucent.
• Step 2: Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.
• Step 3: Add the bite-sized chicken pieces to the skillet and cook for 6-8 minutes, or until the chicken is cooked through and no longer pink.
• Step 4: In a small bowl, whisk together the soy sauce, black pepper, chicken broth, and cornstarch until well combined. Pour the sauce mixture into the skillet and stir to coat the chicken and mushrooms.
• Step 5: Simmer the mixture for 2-3 minutes, or until the sauce has thickened to your desired consistency. Season with salt to taste.
• Step 6: Serve the black pepper chicken with mushrooms hot, over steamed rice or with your favorite side dishes.
