Ingredients

• 1 sheet puff pastry, thawed according to package instructions
• 8 oz (226g) cream cheese, softened
• 1/2 cup (100g) granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 cup (150g) fresh blueberries
• 1 tbsp all-purpose flour
• 1 tbsp lemon juice
• 1 egg, beaten with 1 tbsp water for egg wash


Instructions

  1. Prepare the Filling: In a medium bowl, beat the cream cheese with a hand mixer until smooth and creamy. Add the granulated sugar, egg, and vanilla extract, and continue mixing until well combined. Gently fold in the blueberries, flour, and lemon juice until the blueberries are evenly distributed throughout the filling.
  2. Roll Out the Puff Pastry: Unfold the thawed puff pastry sheet on a lightly floured surface. Use a rolling pin to gently roll the pastry into a 12-inch square, taking care not to overwork the dough.
  3. Assemble the Danish: Cut the puff pastry sheet into 9 equal squares. Place a heaping tablespoon of the cream cheese filling in the center of each square. Fold the corners of the pastry over the filling, overlapping them slightly to create a triangular shape.
  4. Bake the Danish: Carefully transfer the assembled danishes to a parchment-lined baking sheet. Brush the tops of the pastries with the egg wash. Bake in a preheated 400°F (200°C) oven for 18-22 minutes, or until the pastry is golden brown and the filling is set.
  5. Cool and Serve: Remove the baked danishes from the oven and let them cool on the baking sheet for 5 minutes. Serve the Blueberry Cream Cheese Danishes warm or at room temperature, garnished with a light dusting of powdered sugar, if desired.
