The Ultimate Authentic Breakfast Pigs in a Blanket

  • Author: Elizabeth
  • Total Time: 38-42 minutes

Ingredients

• 1 lb (454g) breakfast sausage, casings removed
• 2 cups (250g) all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 6 tablespoons (85g) unsalted butter, chilled and cubed
• 3/4 cup (180ml) milk, plus more for brushing

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Dough: In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the chilled butter using a pastry cutter or two forks until the mixture resembles coarse crumbs. Gradually stir in the milk, mixing just until a soft dough forms. Be careful not to overmix, as this can result in a tough texture.
  3. Roll and Cut: On a lightly floured surface, roll the dough out to a 1/4-inch thickness. Use a 3-inch round cutter to cut out circles from the dough.
  4. Assemble the Pigs: Place a small portion of the sausage filling in the center of each dough circle. Gently wrap the dough around the sausage, pinching the seams to seal.
  5. Bake to Perfection: Arrange the assembled pigs in a blanket on the prepared baking sheet, seam-side down. Brush the tops with a little milk. Bake for 18-22 minutes, or until the dough is golden brown and the sausage is cooked through. Keep an eye on them, as you want the exterior to be crisp and the interior to be tender and juicy.
