• 4 boneless, skinless chicken breasts
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 pint cherry tomatoes, halved
• 1/2 cup fresh basil leaves, chopped
• 2 tablespoons balsamic vinegar
• 1 teaspoon salt
• 1/2 teaspoon black pepper
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper.
• Step 2: In a large oven-safe skillet or baking dish, heat the olive oil over medium-high heat. Add the chicken and sear for 3-4 minutes per side, or until golden brown.
• Step 3: Transfer the skillet or baking dish to the preheated oven and bake the chicken for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
• Step 4: While the chicken is baking, prepare the bruschetta topping. In a medium bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, and a pinch of salt and pepper. Stir to combine.
• Step 5: Once the chicken is cooked through, top each breast with a generous portion of the bruschetta topping. Return the dish to the oven and bake for an additional 5 minutes to allow the flavors to meld.
• Step 6: Serve the bruschetta chicken immediately, garnished with additional fresh basil leaves if desired.
