Ingredients
• 1 pound boneless, skinless chicken breasts, cooked and shredded
• 1/2 cup Buffalo sauce (plus more for serving)
• 1 cup shredded cheddar cheese
• 1/4 cup crumbled blue cheese (optional)
• 1 package (12 count) egg roll wrappers
• 2 tablespoons olive oil (for frying)
Instructions
• Step 1: In a medium bowl, mix together the shredded chicken, 1/2 cup of Buffalo sauce, cheddar cheese, and blue cheese (if using) until well combined.
• Step 2: Lay an egg roll wrapper on a clean surface in a diamond shape. Place 2-3 tablespoons of the chicken mixture onto the lower third of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly.
• Step 3: In a large skillet or Dutch oven, heat 1-2 inches of olive oil to 350°F. Carefully add the egg rolls, seam-side down, and fry for 2-3 minutes per side until golden brown and crispy.
• Step 4: Remove the fried egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with additional Buffalo sauce for dipping.
