Ingredients
• 2 tablespoons olive oil
• 1 large onion, diced
• 3 cloves garlic, minced
• 2 pounds boneless, skinless chicken breasts, cubed
• 2 cans (15 oz each) white beans, drained and rinsed
• 1 can (14.5 oz) diced tomatoes
• 3 cups chicken broth
• 2 tablespoons Cajun seasoning
• 1 teaspoon ground cumin
• 1/2 teaspoon dried oregano
• 1/4 teaspoon cayenne pepper (optional, for extra heat)
• Salt and black pepper to taste
Instructions
• Step 1: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for 5-7 minutes, stirring occasionally, until the onion is translucent and fragrant.
• Step 2: Add the cubed chicken to the pot and cook for 6-8 minutes, or until the chicken is lightly browned on all sides.
• Step 3: Stir in the drained and rinsed white beans, diced tomatoes, chicken broth, Cajun seasoning, cumin, oregano, and cayenne pepper (if using). Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until the flavors have melded and the chili has thickened slightly.
• Step 4: Taste the chili and adjust the seasoning with salt and black pepper as needed.
• Step 5: Serve the Cajun White Chicken Chili hot, garnished with your desired toppings such as shredded cheese, diced avocado, chopped green onions, or a dollop of sour cream.
