Ingredients
• 2 pounds fresh or frozen pitted cherries
• 1 cup granulated sugar
• 1/4 cup water
• 2 tablespoons fresh lemon juice
• 1/4 teaspoon almond extract (optional)
Instructions
• Step 1: In a medium saucepan, combine the cherries, sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally, until the sugar has dissolved, about 5 minutes.
• Step 2: Remove the saucepan from the heat and stir in the lemon juice and almond extract (if using). Allow the mixture to cool completely, then transfer it to a blender or food processor and puree until smooth.
• Step 3: Pour the cherry puree into a shallow baking dish or a metal or glass loaf pan. Cover the surface with plastic wrap, pressing it directly onto the puree to prevent ice crystals from forming.
• Step 4: Freeze the sorbet, stirring and scraping the edges every 30 minutes, until it reaches your desired consistency, about 2 to 3 hours.
• Step 5: Once the sorbet is frozen, scoop it into bowls or cones and serve immediately.
