Ingredients
• 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
• 2 large leeks, thinly sliced (white and light green parts only)
• 2 tablespoons unsalted butter
• 1 clove garlic, minced
• 1 cup heavy cream
• 1/2 cup low-sodium chicken broth
• 1 teaspoon dried thyme
• Salt and black pepper to taste
Instructions
• Step 1: In a large skillet, melt the butter over medium heat. Add the leeks and garlic, and sauté for 5-7 minutes, or until the leeks are soft and fragrant.
• Step 2: Add the chicken to the skillet and cook for 5-7 minutes, or until the chicken is lightly browned on all sides.
• Step 3: Pour in the heavy cream and chicken broth, and stir in the dried thyme. Season with salt and black pepper to taste.
• Step 4: Bring the mixture to a simmer and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
